Pesto



I tend to not use strict weights or measurements, instead I see if it tastes right...You will need a blender, measuring jug, basil, pine nuts, garlic, olive oil and cheese 
(I used cheddar but Parmigiano-Reggiano is better.)


1. Finely chopped the garlic clove.
2. Pour 150ml of olive oil into the measuring jug.
3. Add the pine nuts ( put in a decent handful, can always add in more later if it doesn't taste right.)


4. Add in the basil leaves. 


5. Grate the cheese (a decent handful and you can always add in more later if it doesn't taste right.)


6. Blend it all together! 

7. See how it tastes and if it's not quite right add in more cheese/oil/pine nuts/basil until you have your desired taste.


8. Serve it! Pesto can be eaten with a variety of foods. I tend to eat it with salmon or gnocchi.
